Words are weird.
They are both cookie sheets to me.
We just call them all baking sheets, because you bake things on them.
Do they still make cookie sheets without sides? My mom had some, but I haven't seen any like that in years.

I always use my jelly roll pans and call them cookie sheets. Whatever your mother teaches you though I think your mom would confuse me.
I just call them all baking trays, whether they have sides or not. Although, I do prefer the ones without sides for cookies because it's easy to just slide them off once they're cooled enough.
